Cherry Bakewell Slice Recipe

INGREDIENTS:

Shortbread base:

180g plain flour
70g granulated sugar
40g oats
½ teaspoon baking powder
¼ teaspoon salt
120g butter, cold and chopped
1 egg yolk

Cherry jam:⠀

60ml Franklin & Sons Cherry & Plum Soft Drink
400g cherries, halved and pitted
120g granulated sugar
1 lemon, zest

Hazelnut frangipane filling:⠀

75g unsalted butter, room temperature
120g granulated sugar
2 eggs, room temperature
1 teaspoon vanilla extract
180g hazelnut meal
Pinch of salt
1 plum sliced thinly
30g hazelnuts, halved

METHOD:

1. Pre-heat oven to 180C/350F. Grease and prepare an 8inx8in brownie pan with baking paper allowing it to hang over the sides.

2. Add the flour, sugar, oats, baking powder and salt into a medium mixing bowl and stir to combine.

3. Add the butter and using your fingertips rub the butter into the flour until it resembles dried breadcrumbs.

4. Add the yolk and mix in with your fingertips. You should be able to squeeze the mixture together so it forms a light ball.

5. Pour the crumble mixture into the prepared pan, spread it out into an even layer and press down with your fingertips until it forms a flat base.

6. Prepare the cherries – Tip the Franklin & Sons Cherry & Plum Soft Drink, cherries, sugar and lemon zest into a large, heavy-based saucepan and simmer uncovered over a medium-high heat for 10 mins, stirring frequently until thick and glossy.

7. Allow to cool slightly and then pour onto the shortbread base and smooth out into an even layer.

8. Make the hazelnut filling – In a large bowl, cream the butter and sugar together with an electric beater on medium speed.

9. Add the eggs, vanilla extract, hazelnut meal, salt and stir. Dollop the filling on top of the cherry jam and level with a spatula.

10. Place plum slices on top of the filling and sprinkle with hazelnuts.

11. Bake for 45-50 mins until the middle is just set, then remove from the oven and cool in the brownie pan for 15 mins.

12. Using the baking paper, lift the slice out of the pan and cool.

13. Slice and serve with a glass of Franklin & Sons Cherry & Plum Soft Drink over ice.
